STEP 1/11
Mix 150ml of rice and 50ml of glutinous rice, wash it, and soak it in water. If you have enough time, you can soak it for about an hour, and if you don't have time, you can soak it for a while.
STEP 2/11
Drain the soaked rice in a strainer.
STEP 3/11
Heat a pot and cover it with 1 tablespoon of sesame oil. If you add too much sesame oil, the porridge becomes greasy.
STEP 4/11
Add drained rice and stir-fry over medium-low heat. Stir-fry rice soaked for more than an hour over medium low heat for about 10 minutes.
STEP 5/11
When you stir-fry rice that is not sufficiently soaked, you can feel the rice getting hard and stiff because it is dry. In that case, add a spoon or two of water and stir-fry for 10 minutes.
STEP 6/11
When the rice starts to stir-fry well and become transparent, pour a liter of water.
STEP 7/11
At first, boil over medium heat for 10 minutes until foam rises. There's a lot of water, so you don't have to stir it.
STEP 8/11
Reduce heat to medium low, cover and simmer for another 5 minutes. There's still a lot of water left, so you don't have to stir it.
STEP 9/11
Open the lid again and simmer for another 3 minutes while stirring. The fire is still medium and low. It becomes thicker as the water is almost gone.
STEP 10/11
Finally, change the heat to low heat, close the lid again, and let it steam for 2 minutes.
STEP 11/11
The delicious white rice porridge is completely soft and chewy.
If you are in a special situation, such as enteritis or a health check-up, eat only a little soy sauce and sesame oil, otherwise it is delicious with salty side dishes.
- The simpler the ingredients, the more important the process of making food is. Even if you boil it all at once or for too long, the porridge doesn't taste good. Stir-fry it in sesame oil for 10 minutes and boil it for 20 minutes while controlling the heat.
- If you season the porridge in advance, it will quickly evaporate, so it is recommended to season it when you eat it or eat it right away without storing it for a long time.
- It is also important to control the amount of dead water. Adding water five times the amount of rice is the most delicious concentration.
- It's much better to boil it with rice than to boil it with rice. If you boil it with rice, you have to hold less water than rice.
