STEP 1/6
Mix soy sauce, vinegar, plum extract, and water 1:1:1:1 and place in refrigerator.

Cut the onion in half and slice it thinly with a chopping knife
Soak it in water for a while to get rid of the spicy taste.

Cut only 1/3 of soft tofu and 1cm of chives.
STEP 4/6
Put bean sprouts in boiling water, open the lid, boil for 6-7 minutes, and rinse in cold water until the stems are transparent.

Drain the onion and mix the chives with the bean sprouts.
*Instead of chives, I like the green onions that are popular these days.
STEP 6/6
Place each ingredient in a bowl and pour in the soy sauce to complete.
The ratio is good at 1:1:1 but if it doesn't suit your taste, please adjust the amount.
Vegetables taste better when the sauce is poured cold, so make sure to put them in the refrigerator.
