Cooking Steps
STEP 1/18
Please prepare the ingredients first.
The octopus is already trimmed and cut into bite-size pieces, so I bought frozen ones.
If it's raw octopus, you have to remove the intestines and there's a lot of work to do.
STEP 2/18
Soak frozen octopus in water and defrosting it in water.
STEP 3/18
It's already been trimmed, but it feels a bit uncomfortable, so I rubbed it with thick salt or flour.
And wash the octopus with water.
STEP 4/18
Boil the water in a pot and blanch the octopus in boiling water for 10 to 15 seconds.
If you boil it for too long, the octopus becomes tough.
STEP 5/18
Wash the octopus in cold water.
If you wash it in ice water at the last time, the raw meat becomes more chewy.
STEP 6/18
Drain the octopus in a strainer.
STEP 7/18
Drain the octopus completely with a kitchen towel.
STEP 8/18
If it's a whole octopus, cut it into bite-size pieces.
STEP 9/18
Please trim the vegetables.
Slice the onion into 1cm thick slices, and chop the green onion and cheongyang pepper slightly (about 0.5cm).
STEP 10/18
Put the ingredients for the sauce in a bowl and make the sauce.
Add 1 tbsp sugar, 1 tbsp minced garlic, 3 tbsp dark soy sauce, 3 tbsp red pepper powder, 1 tbsp cooking wine, and a little pepper and mix well.
STEP 11/18
Put half a cup of cooking oil in the pan
STEP 12/18
Add green onions and stir-fry slightly over high heat, stirring until scented.
STEP 13/18
When green onion flavor comes up, add onion and continue to stir-fry.
STEP 14/18
When the onion becomes transparent, reduce the heat to medium and stir-fry with the sauce.
STEP 15/18
If the sauce goes well with the vegetables, add octopus and hot pepper
STEP 16/18
Turn the heat to high and stir-fry for another minute or so.
If you stir-fry it for too long, the octopus becomes tough and water comes out of the vegetables.
STEP 17/18
Turn off the gas stove, put 1 tablespoon of sesame oil, mix it once, and sprinkle sesame seeds to complete stir-fried octopus, which is good for relieving stress and rejuvenating.
