In a stainless steel bowl (if not, dip 2 stainless steel spoons), add 1 tablespoon of salt and 1 tablespoon of vinegar to soak the cockle. Cover with black plastic and remove for 20 minutes.

When the water starts to boil, add 1 cup of cold water to make 5-60 degrees of water and add 1 tablespoon of refined rice wine. Cook for 3 minutes stirring in one direction, remove the hot cockles and cook them over residual heat.
