How to make japchae delicious so that it doesn't get soggy
Japchae is my favorite food to invite guests during holidays. I brought a japchae recipe that doesn't boil the glass noodles and never get soggy. When you want to make something special in your daily life or during the holidays, you get praised for this recipe

Cooking Steps
STEP 1/11
Soak glass noodles and dried mushrooms for 1 hour and 20 minutes, respectively.
STEP 2/11
I'll cut the vegetable ingredients into long pieces and prepare them for you lengthwise.
Cut wood ear mushrooms into finger-sized pieces.
STEP 3/11
I'll season the japchae pork and shiitake mushrooms.
Put meat and shiitake mushrooms in a bowl, soy sauce, cooking wine, sugar, minced garlic, sesame oil, and pepper
Cast evenly so that the seasoning is cut.
STEP 4/11
Add salt to boiling water, spinach, and when it boils again, remove it, rinse it in cold water, and squeeze the water out.
I'll just put salt and sesame oil in the watery spinach and mix it gently.
STEP 5/11
Seasoning - Add soy sauce, water, pepper, oligosaccharide, sugar, oyster sauce, and cooking oil as appropriate
Mix it well in a big bowl and the seasoning is complete.
STEP 6/11
First, fry onion, carrot, paprika, and wood ear mushrooms over high heat with a little oil in a heated royal pan.
If you are out of breath, turn off the heat and put it on a separate plate and cool it down.
STEP 7/11
Stir-fry the seasoned pork and shiitake mushrooms in the same pan.
I'll also spread the fried meat on a plate and cool it down.
STEP 8/11
Put the meat on the pan over high heat
Add the sauce for japchae and bring to a boil. When it boils, add the soaked glass noodles and stir-fry them.
STEP 9/11
When the glass noodles are cooked, cut them into bite-size pieces with scissors, stir-fry until the sauce is gone, and then turn off the heat.
STEP 10/11
When the glass noodles are all fried, pour the prepared vegetables and meat right on top, sprinkle sesame oil, and mix them evenly.
It's hot, so please use cotton gloves and sanitary gloves.
STEP 11/11
Sprinkle sesame seeds and make it savory, and you're done with japchae.

I don't boil glass noodles. You have to stir-fry the soaked glass noodles with the sauce so that the glass noodles don't get soggy. You need to have more vegetables and meat than glass noodles to enjoy healthier and more delicious japchae.
