Making Healthy Table "Eggplant Rice"
My family was all busy, so I ended up eating alone yesterday. It's a bit burdensome to make food that requires a lot of work, so I decided to make "eggplant rice" that can be made simply. Eggplant rice does not need any special ingredients, and you can make a basic base with only eggplant and green onion, which are the main ingredients, and it is also good to make and eat with various ingredients left in the refrigerator according to your preference. When I looked through the refrigerator, there was a leftover "pork" from making dried radish greens, so I put it in "eggplant rice."

When you make the sauce, if you put too much soy sauce, it doesn't taste as good. Don't put all 0.5 cups at a time, but adjust your own amount according to the amount of vegetables you use.
