Prepare pork belly in half.

Heat a frying pan or wok over high heat and grill with whole pork belly.

Turn it upside down and cook all six sides.

When the surface of pork belly is golden brown, set aside.

And clean the pan that grilled pork belly with a kitchen towel.

Put 1/2 cup soy sauce, 1/2 cup cooking wine, and 1/2 cup sugar in a pan.

Add 1L of water, half a whole onion, large green onion, and 5 bay leaves and boil over high heat.

When the sauce boils up, add the grilled pork belly and keep boiling.

Boil over high heat for about 20-25 minutes and reduce to medium heat.

And if you cook the sauce well until it's all boiled down, you'll get this thick char siu!

Take out the meat separately and cool it down, and remove the onions, green onions, and bay leaves that you put together.

And after you cut the remaining half of the onion into the right thickness

Put the meat in the sauce and boil it.

And if you cut the meat into bite-size pieces, char siu is complete!

Now, I'm going to make char siu rice. Put rice in a bowl, put boiled onions on the sauce

If you put char siu on top, you're done making char siu over rice!
Char siu is a braised dish anyway, so you don't have to add a certain amount. You can think of this amount as 1:1:1 with soy sauce, cooking wine, and sugar.
