It's a Chinese style fried eggplant
I'm into Chinese style dishes these days. I made stir-fried eggplants that the groom likes at home!

Cooking Steps
STEP 1/11
First, wash the eggplant clean and cut it into bite-sized pieces. Then season it with salt or pepper.

Chop the prepared vegetables and prepare them. I added onion/ paprika/ carrot/ cheongyang pepper and you can prepare it according to your preference or refrigerator situation^^
STEP 3/11
Defrost the sweetened meat that was sleeping in the freezer to remove the blood with a kitchen towel and season it with salt and pepper.
STEP 4/11
Stir-fry chopped vegetables, add sweetened meat, and stir-fry them together
Pour the sauce made by mixing flavored soy sauce, vinegar, minced garlic, red pepper powder, oligosaccharide, plum juice, olive oil, vinegar, and water to make the sauce for stir-fried eggplant in advance. Bring to a boil over high heat. Adjust the sweetness and spicy taste to suit your taste while tasting it.

Put flour on the chopped eggplant, and if you use a sanitary bag, it can be easily evenly coated.

Mix frying powder and water to make a dough. If you add ice, you can make more crispy fries.
STEP 7/11
Dip the floured eggplant into the batter.

Heat the oil, drop the dough slightly, and fry the eggplant if you think it will fry immediately.

When it's golden brown, take it out.

Place it in a strainer and drain the oil slightly from the frying pan.

Mix the sauce on the fried eggplant to complete the Chinese-style fried eggplant stir-fry. It's a good snack to eat with beer or Kaoliang liquor.
Stir-fry the completed fried food once in the sauce over high heat, and even when mixed, the fried food doesn't get soggy and it's delicious.
