There are probably people who have bad memories of water parsley. These days, most of them grow in greenhouses. Water parsley grown in the open air sometimes comes with leeches attached. There are times when I get surprised when I eat it without washing it thoroughly.
First, soak the water parsley in water with a spoon or two of vinegar for about 30 minutes.

Then remove the dirty leaves and wash them clean under running water.

Let's make the sauce.
Add 2T of red pepper powder, 1T of soy sauce, 1T of minced garlic, 1T of water, 2 pinch of salt, and sesame seeds and mix well.
I used soy sauce. You can add the fish sauce.

Cut the stems and leaves of the clean water parsley separately. It's good to eat if you cut it about 5cm long.

I'm going to parboil the water parsley in boiling water. If you boil it for a long time, it'll get tough, so it's better to boil it a little bit.
Blanch the stems in boiling water for 10 seconds and rinse them quickly in cold water.

Parboil the leaves in boiling water for 5 seconds and rinse them in cold water.
STEP 7/9
Squeeze water parsley in boiling water.

Add the seasoning and mix well.

It's water parsley kimchi that's done in 10 minutes. I had a delicious dinner with just one water parsley kimchi.
I cut tofu and baked it in perilla oil until golden brown, and put water parsley kimchi on it, and it tasted so good. I think it would be good to make only water parsley kimchi and mix it with white rice and make bibimbap with a fried egg.
