It will be easier if you buy a finished balloon flower, but you may need to trim it. Peeling bellflower roots is the most important thing to do. It's good to just peel it easily. Please refer to the video below for how to prepare bellflower roots.

STEP 2/11
I will soak bellflower roots for a while to remove the bitterness before mixing them.
Add 2T of sugar, 2T of vinegar, and 1T of salt and soak the bellflower for about an hour.
You can easily remove the bitter taste of bellflower roots.

Trim the cucumbers.
I used thorns for cucumbers. You may use a white cucumber. I like the chewy texture, so I use thorns when I make bellflower roots. It's about 1.5 to 2 times bigger than a white cucumber. If you're going to use white cucumbers, I think you can put in about three.
Wash the cucumbers clean and cut them vertically.
STEP 4/11
Scrape the seeds off with a teaspoon. If you use it like this, there's no water in the bellflower cucumber salad.
STEP 5/11
Cut the cucumber with the seeds inside into 2mm thin slices. It tastes better when it's thin and firm.

Add 1.5T of salt to cucumbers and mix them and marinate for about 30 minutes.
If you pickle it and use it, it's DoragioThere's no water in this salad.

To remove the water
Rinse the pickled bellflower root and cucumber in water to remove the water.
Squeeze the cucumber tightly so that it doesn't break, and remove the moisture as much as possible.
STEP 8/11
Shake bellflower root several times in a sieve to remove as much moisture as possible.
STEP 9/11
Let's make the sauce.
Mix red pepper powder 5T, sugar 4T, vinegar 7T, minced garlic 1.5T, salt 1t and sesame seeds well.
If you're going to eat it soon, add a little bit of sesame oil. Adjust vinegar and sugar to personal preference. I like it when it's sweet and sour.

Mix balloon flower and cucumber with seasoning.
