Making delicious steamed clams with alcohol
There's a long time ago that I enjoyed watching! It's a very famous drama. A late-night restaurants. In the early episodes, you drink like you're addicted to alcohol The old mother and her daughter who came to the late night restaurant to stop her on the side of the story There was an episode where steamed clams were served. She was an old lady who always ate cheongju with steamed clams It looked so delicious..-M- The owner of the late night restaurant makes it so quickly I think I can make it. It's not a recipe but a drama video The first time I tried it It's become my favorite dish now.

    1ea
  • Scallions
    4~5ea
  • Butter
    1piece
  • olive oil
    4~5spoon
  • Salt
  • parsley
  • anchovy broth
    400ml
  • Cheongju
    200ml
  • White wine
    200ml
Cooking Steps
STEP 1/24
I prepared the ingredients. I usually boil anchovy stock a lot and keep it in the refrigerator. I use it often, so I tend to boil it a lot when I boil it. Green onion, red pepper.Garlic, cheongyang pepper, rat poop pepper.I'll trim the green onions well. It's better to trim the green onions into the size of your knuckles.
STEP 2/24
I'm going to make it spicy as a snack
I used three kinds of red pepper, rat poop and cheongyang red pepper, but if you don't like spicy things
Add a moderate amount of pepperoncino or cheongyang pepper. But don't think about it and put in a lot is definitely delicious!!(Really!!)
STEP 3/24
Put olive oil in a preheated pot
I'm going to curl it!
STEP 4/24
I'll melt a piece of butter well!!
STEP 5/24
Turn it down to low heat, then add green onions and garlic to make enough scent.
Stir-fry it.
STEP 6/24
The color comes out moderately and the scent is enough
When it comes up, put in the red pepper.
STEP 7/24
Put in the washed clams!!!
Before putting in the clams, turn it back on high heat!!
STEP 8/24
Raise the heat to high and stir-fry it.
STEP 9/24
When the clams are about to open, add anchovy stock again. I put in about 400mm, but if you want to enjoy the soup with me, you can add more. (As long as the amount of clams is enough.)
STEP 10/24
Add anchovy broth and hot pepper!!
STEP 11/24
Restoring the White Paper!!!! Add a 200mm paper cup by eye guess
(It's troublesome to improve!!!) Cheongju is good or soju is good, but Cheongju tastes much better than soju.
STEP 12/24
Add about 200 millimeters of white wine. Set the ratio of anchovy stock and rice wine to 2:1:1.
STEP 13/24
Add rice wine and white wine and when it starts to boil, cover it with strong heat and boil for 3 to 4 minutes. If you open the lid, it smells like!!
It's a pity that it doesn't smell in pictures or videos!!-m-!! The reason why I use Cheongju and white wine together is because it has a good flavor, but it smells!!! -_-b
STEP 14/24
Chewy and fragrant steamed clams with alcohol
Even though I caught a lot of anchovies again, there's a lot of steamed alcohol
STEP 15/24
It's delicious just by eating clams, but you have to eat it with soup to double the taste!! If you turn off the heat and put the chopped chives and red pepper on top, steamed clams are done!!
STEP 16/24
It's definitely better to have chives in steamed clams. (My meme) The chives go up in the episode of steamed clams in the late night restaurant. lol
In fact, the recipe from the late-night restaurant was steamed clam liquor, which was all about adding a little bit of soy sauce and scooping it up after boiling it, but it looked like that
STEP 17/24
Dip the chubby clams in the soup
If you eat it with chili peppers!!
It's so delicious!!
STEP 18/24
And you can sip the leftover white and white wine after steamed clams. (Buying alcohol under the pretext of food...)
STEP 19/24
I really enjoyed the meal. Anchovy broth definitely catches the taste of the soup, and white peach, white wine, and butter enhance the flavor. Make sure that you don't get sick of spicy peppers and garlic!! I ate well, but I feel a little empty. I have to eat dessert.
Spaghetti for dessert.+_+ A lot of white wine and broth is a detailed double track to stir-fry noodles...
STEP 20/24
I'm boiling the noodles. I'll put in two pinch of salt. Personally, I like the wide-open Fettuccine noodles!
STEP 21/24
It's as easy as that. boiled noodles in the remaining broth
Add some olive oil.
STEP 22/24
Place a little truffle salt on a Shararak plate for a little flavor. 10 minutes is enough to make pasta!
STEP 23/24
Put the noodles on a plate, put the remaining peppers and garlic on top, sprinkle parsley, and Vongole oil pasta is complete!!
STEP 24/24
It is a pasta that has been stir-fried with noodles by boiling steamed clam extract again, so the taste is strong and the smell of clams is strong. I always roll pasta noodles after making steamed clams. This style is more like you're mixing it up rather than frying pasta after steaming it!!
If you like steamed clams Broth stock + Blue wine + White wine + Butter I'll add a lot of broth Try making vongolae pasta for dessert. It's also good for steamed clams It will be a delicious meal!!
