You can stir-fry vegetables separately, and you can just mix noodles and tofu with the sauce.
The texture of noodles and tofu is different from regular noodles, so you need to put a lot of vegetables to make the texture less annoying.
You can use the vegetables you have at home. It's good to shred and stir-fry the peppers together.
It's really good if you stir-fry the meat and make it like japchae. Noodles don't get soggy, so it's good to make japchae.
