STEP 1/7
First, prepare lotus leaves and pork. I chose front leg meat, and I like both pork belly and pork neck depending on my preference.
STEP 2/7
We need to remove the blood from the pork first. The basic method is to soak it in water for 30 minutes. However, if you put sugar or coke in water together, the time will be reduced to 10-15 minutes. One thing to keep in mind when removing blood is that if you soak the meat in the water for too long to remove blood, it will cause loss to the juice, making it tough and less flavorful
STEP 3/7
I did an experiment because I was wondering if sugar really shortens the time. The left side is just water, and the right side is meat in water mixed with a spoon of sugar, and about 10 minutes later. Isn't the sugar water murky? If you soak pork in sugar-sweetened water, you can remove blood faster than just water. I'm done!
STEP 4/7
When the blood-red meat is ready, wash the lotus leaves thoroughly and spread them out well, put a lump of boiled meat on top and season with salt and pepper
STEP 5/7
Roll the meat with lotus leaves
STEP 6/7
I thought the meat was a bit thick, so I put it in the steamer and gave it 50 minutes
STEP 7/7
It's well de-greased and well-cooked
I think lotus leaves are more convenient and useful than I thought because they add smell and flavor to the dish.
