Soybean noodle soup
Jang Kalguksu, flavored with red pepper paste and soybean paste, is a local food in Yeongdong, Gangwon-do, and is characterized by thick soup using soy sauce. Like Jangtteok, it has a rough feeling, but it has enough charm for me, who loves spicyness. It's windy shaking branches from the morning. The wind was coming cold. I walked with the open window closed. If you're looking at the branches of the wind-shaking tree...As I refrain from going out due to the current situation, I feel isolated somewhere in a cabin in a remote mountain. Even if I open the door and go outside, I don't think anyone will be there. When I think about whether we should live with masks forever, I feel speechless and gloomy. Wear a thin cardigan in the cold air of the house and melt your heart with a bowl of spicy noodle soup.

Cooking Steps
STEP 1/9
Add anchovies, depots, onions, green onions, mushrooms, radishes, and spicy peppers in advance to make a strong broth.
STEP 2/9
Prepare all vegetables by cutting them into large pieces.
STEP 3/9
Put 3 cups of anchovy stock in a pot and add soybean paste and red pepper paste,
STEP 4/9
Add red pepper powder and plum extract.
STEP 5/9
Boil vegetables except green onions.
STEP 6/9
When the potatoes are 80% cooked, add minced garlic
STEP 7/9
Put in the noodles.
It is characterized by a thick soup, but it is good to shake off some flour on the surface of the noodles and add it.
STEP 8/9
When the noodles are fully cooked, add green onions and finish.
STEP 9/9
Put it in a bowl, add a lot of seaweed powder, and sprinkle sesame if you like.
Apply vegetables to your liking. Only doenjang and gochujang are seasoned, but if you think it's not enough, add a little more sauce or use a little salt. It's delicious with a lot of seaweed powder. I sometimes wrap noodles with seaweed and they're really good.
