Making crunchy and sweet dalgona madeleine

I had a mini madeleine mold at home, and I thought it would be really good to make dalgona madele I made dalgona before the trend was over Haha Madeleine is made with a basic recipe. Madeleine has butter, flour, sugar, and eggs in 1:1:1 ratio, so it's easy to make and easy to measure. Cooking Steps

The first thing you need to do is to butter and flour the madeleine mold, and if you don't do this carefully, it may not be separated from the mold after it is baked later.
Spread melted butter on molds and use a sieve to sprinkle flour evenly. Then, flip it over and shake it off, and keep it in the refrigerator until the dough is complete.

Then melt the butter in a medium bath and cool until the rest of the process is complete.
If you knead the dough while the butter is hot, it may become too tough and not complete. Cool to 35 to 40C.
When you use a double boiler, the bowl should always be bigger than the pot. The reason is to prevent water vapor or water from entering the bowl.
Also, when boiling in a double boiler, do not boil the water in the pot, but keep it simmering slightly over low heat.

Beat in eggs, then add sugar and mix well.

If egg and sugar are well blended, add flour and whisk well.

Stir in moderately cooled butter, pouring little by little into the batter. Mix well until dough is smooth.

Then, cover it with plastic wrap or plastic and let it rest in the refrigerator for at least an hour.

Mix the rest of the dough well again and pan it into a pie bag at 80 to 85%. You don't need a pod.

Place in a preheated 180C oven and bake for 13-15 minutes.

Put the well-cooked madeleine into a cooling net, cool it down, and make dalgona.

Add water and sugar and bring to a boil. It may take some time for the water to go in and the moisture to evaporate.
Never stir and bring to a boil until the edges are yellowish.

When yellow, turn the pan and mix slowly, add soda and stir.

Place an appropriate amount of dalgona in a mold and gently place the madeleine on top as shown in the picture.
Time is important. You have to put dalgona on top and madeleine on top so that it doesn't harden.

When the dalgona hardens and cools to a certain extent, it falls off by itself. Isn't it so cute?
