STEP 1/13
First, put the eggs in a bowl and beat them.
Since it's not a cake, gently mix it so that it doesn't foam!!
Use 102g of eggs and put the remaining eggs on the top when baking later ^^ Place the remaining eggs on one side.
Add condensed milk, sugar, starch syrup, salt and butter to lightly beaten eggs.
Now I'm going to melt the butter and sugar!!
STEP 2/13
In a bowl smaller than a dough bowl, take hot water and place the dough bowl on top of it and melt it. Continue to stir well until the sugar and butter are all melted. You have to keep stirring hard because the eggs can be cooked by mistake!! And sugar dissolves everything so that no particles can be touched. You can put it in your hand and touch it. ^^ It doesn't seem like a big deal, but it's the most important thing. If you don't dissolve all the sugar, after you make it, like I did before.. It is said that there is a defect that causes the bread to burst.
The dough that is all melted in sugar is melted in a double bath, so the temperature of the dough rises lukewarmly. Now put this dough on the cold water and let it cool completely so that the cold air will blow!!
STEP 3/13
Sift the gravitational flour and baking powder into the cooled mixture and mix evenly so that there is no flour left. At this time, the dough is so tough that it can't be molded. Cover the bowl with plastic wrap and leave it in the refrigerator for more than 40 minutes. While the dough is resting, weigh 40g of red bean paste and make it round. I used the whole red bean paste sold in the market.. I think it'll taste better if you make the red bean paste yourself. And I thought it would be better to mix nuts.
I just made it with red bean paste this time, but next time, I'm going to stir-fry walnuts and chop them into small pieces. I think it'll taste better because it's savory and chewy^^
STEP 4/13
An hour later... The dough hardened a lot because I took a rest in the refrigerator, but it's hard to roll it out and get plastic surgery.
STEP 5/13
So I'm going to coat it with powder for plastic surgery. You can use either gravity flour or soft flour. I used soft flour. Sprinkle flour on the cutting board, place the dough, and knead it with your hands to feed it with flour.
STEP 6/13
I just need to feed him enough to get plastic surgery.. The dough is so hard that there's more powder than you think. Even if you take the dough off, you can add the powder only so that it doesn't stick to your hands, and if it's still tough, you can add the powder when you roll the dough.
Divide the dough by 20g, shape it round, and roll it to a suitable thickness enough to wrap the red bean paste with a rolling pin. (If the dough is too hard, spread the powder and push it.) (It's important to spread it evenly and push it to the right thickness because it can burst if you push it too thin.)
STEP 7/13
Place 40g round red bean paste on top of the dough and mold it into a circle. (Be careful not to explode!!)
STEP 8/13
It's not a fermented bread, but a dough that doesn't stretch like bread dough, so people who do it for the first time may find it difficult to get plastic surgery. When I put in red bean paste and close the top, I try to press the dough on both sides like a dumpling, but it doesn't work well. Put in the red bean paste and roll the dough like you're rolling a ball.. It's probably not sticking well either.. It's going to explode crying
Just hold the dough with the sediment in your hands and press the joint carefully to make it stick well.
STEP 9/13
If it's done, I'll make a round shape in the middle. Like Little Chu Chuu, I used the back of a hotteok fritter tender to make a shape^^ Press down on the middle part.
STEP 10/13
I think it feels empty on the top, so I put up a walnut and a half. Later, when I tried it, this was the best move!! It's savory and chewy, so it goes really well with the sediment bread. It was a shame that I only put one on the top.. So I thought it'd be good to chop it into small pieces and mix it with red bean paste^^
STEP 11/13
When you're done putting the walnuts in the middle, spray the bread with water~
And apply the remaining egg yolk on the top with a brush.
I thought it'd be pretty if it came out colorful, so I applied it twice.
STEP 12/13
Bake for 15 to 20 minutes in a 180-degree preheated oven. It's done when the top is cooked deliciously. I think you can bake it according to the specifications of your oven specifications^^
STEP 13/13
This is the complete Hwangnambbang!!
