Cooking Steps
STEP 1/11
To make the sauce mature, I made the fresh kimchi sauce first.
Add water to 2 spoons of glutinous rice flour and whisk well to make glutinous rice paste.
You can leave it on medium-low heat so that it's not too high. Cool the finished glutinous rice paste

Grind salted shrimp, onion, garlic, and apple in a blender!!
You can mince garlic and use it. I used the ginger extract at home, but if you just use it, please grind the ginger and prepare it. To make it more delicious.. I ground the apples. Next time, I'm going to use the ripe persimmon in the freezer^^

Mix red pepper powder, ground onion + apple + garlic sugar, fish sauce, plum extract, ginger extract, and glutinous rice paste in a bowl to make the seasoning

It's delicious just by dipping it in the sauce!! Add fish sauce if you need more salt, and if you need more sugar or plum extract, season it^^
Put the seasoning in the refrigerator and let it ripen

Now, we're going to touch the cabbages!! It's my first time to buy a whole bag of cabbages after buying only cabbage.. I didn't know it would be this big. I cut it in half and it was full of speed^^
I'm going to cut the back into quarters.. I'm not sure how full it is.. My wrists are shaking.. Divide the cabbage into quarters and cut the tail with a knife.
You can cut it into bite-size pieces with a knife, but.. I like the sliced fresh kimchi that looks more delicious when cut diagonally^^ Tap it with a knife to make it long diagonally and wash it clean again in water
STEP 6/11
Sprinkle the cabbage with thick salt and pickle it.
Stir it in and out, and check the condition of the pickles
STEP 7/11
I pickled for about an hour and a half. If you bend the cabbage and the thick part bends like the picture, it's okay
STEP 8/11
Wash the pickled cabbage again with water and drain it with a sieve. (You have to remove the water completely so that you can eat it deliciously until the end without getting any water later!!)
Even if it takes time, make sure to remove all the moisture. I drained it for about an hour. It would have been nice if there was a wide body, but I only had a concave one, so I shook it off in the middle.. I flipped it over and took it out
STEP 9/11
If you have chives, it looks better if you cut them into long pieces^^
I.. There was only green onion, so I cut a slice of green onion and put it in. ^^

Mix cabbage, green onions, and aged seasoning in a large bowl

Lastly, add sesame seeds and mix them together
