Altari Kimchi recipe that even beginners can make easily
I like my mom's althari kimchi very much, I'm sorry to ask you to do it every time, and it's not easy to see you because you live far away, so this is my mom's recipe for Altari kimchi.^^ 1 cup of chopsal grass and 5 cups of water (1:5 ratio)

Ingredients

  • a sun-dried salt
    100~150cc
  • Scallions
    15~20ea
  • Red pepper powder
    400ml
  • salted shrimp

  • Fish sauce with sand lance extract

  • Sugar

  • plum extract
    3TS
  • chopped ginger
    1/2TS
  • a thick salt
    1/2TS
Cooking Steps
STEP 1/7
Soak the altari radish in water and wash it with a scrubber.
STEP 2/7
Add 100-150cc of salt and marinate for 2 hours.
The radish just needs to be mushy.
STEP 3/7
I'm going to make sticky rice paste.
Add powder, water, and fold it well
Slowly dissolve it over low heat and make it^^
Let stand and let cool.
STEP 4/7
In the meantime, add all the spices on top and grind.
(I put in 3 spoons because it's less sweet because it's plum extract made at home, so please add or subtract.)
You can also add glutinous rice paste, or you can just grind the seasoning and add glutinous rice paste when you season it later!
STEP 5/7
Rinse the well-pickled altari in water 2-3 times.
STEP 6/7
Now mix it with the sauce, add glutinous rice paste and chives and mix them!
STEP 7/7
That's it!
I like cooked food, so I stay at room temperature for 2~3 days and enter the refrigerator
