STEP 1/10
1. Washing abalone
The first step in preparing abalones is to wash them clean. Of course, abalone lives on kelp or seaweed and comes alive in the sea, so it won't be very messy, but it's better to wash it clean because it's stained with water, right?
You can wash abalone by rubbing it with a brush used in the kitchen. I take out a new toothbrush, wash the abalone, and use it as a kitchen toothbrush. Please wash every nook and cranny. And if you're going to cook with the skin attached, you can wash the skin clean.
STEP 2/10
Then you'll be surprised by how you look before and after. ^^ It's clean, right?
STEP 3/10
2. Separating from Abalone Shells
I heard that the most difficult part of preparing abalone is to separate the skin from the abalone flesh. There are people who might hurt their hands if they do something wrong. If you hold the shell with too much force, you can cut your hand if you slip, so be careful and never separate it with force.
If you take a peek at the flesh of the abalone's mouth, you will see the part where the abalone and the skin are attached. The whole abalone is not attached to the skin. Only the part of a 100 won coin is attached to the shell, so you can easily separate it if you remove this part well.
STEP 4/10
Put a spoon between the shell and the abalone and gently push the part that sticks to it. I think you can think of the temple part of the shell as the part attached to the shell.
Tip. The intestines of abalone are located on the opposite side of the mouth, so if you put a spoon in the part with the abalone mouth and remove it, you can separate it so that the intestines do not burst.
STEP 5/10
3. Removing the viscera
If you separated the abalone from the shell, now you have to remove the abalone intestines. If you can't take it out with your hands, your intestines might explode.
Abalone flesh and intestines are not all stuck together. Abalone guts are attached to the wing-like part. A pen shell also has its temples and wings. I think you can think of it as that.
You can take it off gently with your hands, but if you're worried that the intestines will burst while holding it with your hands, use scissors to gently cut off the wing and remove it, and the abalone intestines will not burst and will be separated.
STEP 6/10
4. Removing Abalone Teeth
The last step in preparing abalone is to remove abalone teeth. There are people who don't know where the abalone teeth are, so they can't remove them. Of course, it's in the mouth of the abalone, but I don't know how to remove it. I'm sure the experts press it with their hands to remove it, but it doesn't just come out if they press it with their hands. If you try it, you will be able to remove it by pressing it with your hand.
If you look at the back of the abalone's mouth, you can see the abalone teeth if you cut it slightly with scissors.
STEP 7/10
The intestines from 17 abalones were this big. I put all of the intestines and cooked abalone porridge. Oh my gosh! This is a taste that you can only see at home. I couldn't buy it outside. The rich and savory taste of abalone porridge is fantastic. Please wait for the next post for the delicious abalone porridge recipe.
STEP 8/10
I made abalone sauce as soon as I prepared the abalone.
Some people don't prepare abalone when making abalone, but make it with the intestines and skin. It looks good, and it's good to pay when customers come. I separated it and made it for her. It's easy to eat.
Make cuts to the trimmed abalone. You can make it without a sheath, but if you make it deep, the shape is prettier, and it's soft and good when you eat it later.
STEP 9/10
It's so easy to cook with Lee Jung-hyun's all-around soy sauce that he made recently.
He added 2 cups of soy sauce and 1 cup of water. You can make and use Lee Jung-hyun's multi-purpose soy sauce, and there are many multi-purpose soy sauce recipes. If you use a small amount, cooking will be easier
Then add the trimmed abalone and simmer for about 10 minutes.
STEP 10/10
After cooling it down, the abalone paste is done! It looks like an abalone flower, right?
