Prepare the peanuts

Place kitchen towel or paper foil on the cutting board and chop peanuts into small pieces.

I used crown daisy to chop chives. You can use green onions.

Pour a little grape seed oil into a heated pan and melt the butter. Stir-fry peanuts and then add rice. If you heat the cold rice in the microwave and stir-fry it, it's easy to stir-fry.

While stir-frying rice, add half a tablespoon of thick soy sauce and a little bit of sesame oil.

Place plastic wrap on a rice bowl and press fried rice. You have to press it down to make it look good.

Beat in mozzarella cheese and eggs.

Turn into a small pan, heat the pan first, then add a little oil and drain. Place fried rice in the center of the pan, surround with 2 eggs, and top with mozzarella cheese. Close the lid and cook the egg mixture.

You can sprinkle chives where the eggs are cooked, and minced green onions are fine. I put the crown daisy on top.
