STEP 1/12
If it was a chicken, I would have put it in two or four pieces. I soaked it in cold water for about 30 minutes to remove the blood.
STEP 2/12
The chicken that was soaked in cold water was blanched slightly in boiling water. You can get rid of the smell and the oiliness first. Please throw away the blanched water.
STEP 3/12
Put 3.5 liters of water in a pot and boil chicken, radish, garlic, ginger, bay leaves, and green onions for 4 to 50 minutes.
STEP 4/12
While the chicken is boiling, chop the carrots, onions, potatoes and pumpkins and prepare them.
Add 1t of salt to the pumpkin separately and when there is moisture, squeeze the water out and put 1t of sesame oil on it and stir-fry it slightly. You can boil it with all the vegetables in it, but the pumpkin quickly fades, so you can't recognize its shape, so you can enjoy it with a very savory taste if you use this method and garnish it like a garnish.
STEP 5/12
When the chicken is boiled, prepare the broth by filtering it cleanly with a cloth or filter. Boiled garlic is used for the seasoning of torn chicken meat. I removed the chicken skin.
After boiling the chicken broth, cool it down and remove the oil from the top to use a very clean broth.
STEP 6/12
Add chicken meat, crushed garlic, 1t of salt, and a little pepper and mix.
STEP 7/12
Boil the broth with 1t of salt and 1t of fish sauce, then add vegetables except pumpkins, add kalguksu noodles and chicken flesh, and stir until the noodles are cooked well.
STEP 8/12
It's cooked when the noodles float on top of the chicken kalguksu. The rising oil of chicken kalguksu and the bubbles of kalguksu were removed with a fine filter. Additional seasoning, please.
STEP 9/12
I put a bowl of chicken kalguksu and put the stir-fried pumpkin and sliced green onion on top.
STEP 10/12
It's a very hearty and light chicken kalguksu. While eating chicken kalguksu, I wondered if I could eat other kalguksu^^
STEP 11/12
If you want spicy chicken kalguksu, mix 2 spoons of red pepper powder and 1 spoon of sesame oil and use it as a seasoned red-pepper sauce, and you can enjoy a super-simple spicy kalguksu.
STEP 12/12
If you don't like kalguksu, go with chicken soup! It's the difference between noodles and rice. Enjoy chicken noodle soup as a healthy food^^
