STEP 1/11
The ingredients are as follows. The egg is missing. I used honey powder made of honey. If you want sugar, reduce it to 20g.
STEP 2/11
Put honey powder, salt, and dried yeast in three places each in strong rice flour and mix them so that they do not touch each other.
STEP 3/11
I kneaded it in the baking machine. Put cold milk and egg in the bottom and mix rice powder to open the lid of the baking machine and knead.
STEP 4/11
The reason for opening the lid of the baking machine is to blow away the heat from kneading. (You have to knead rice flour in a cold state to make bread well. Prepare cold milk, eggs, and as cold as possible. And it's important to knead it a little less than the dough, instead of waiting until it's fully functional.) After the dough is somewhat lumped together, add grape seed oil.
STEP 5/11
The surface of the old baking rice flour was rough even after finishing the dough. It breaks off easily. By the way, this Love Rice Powder is very soft and smooth. It's the same as flour dough.
STEP 6/11
The total weight of the dough was 511g. So we split it into 10 pieces, 50g to 51g, and then we'll roll it, cover it with plastic, and then do the fermentation for 15 minutes
STEP 7/11
Put it in an angel mold and apply plastic surgery. I love rice bread because there is no first fermentation process. You can make it much faster than flour bread.
STEP 8/11
I ferment using a microwave. Fill the water cup with about 1/5 of water and return it for 2 minutes, and the water boils and the microwave is filled with water vapor. It's warm inside, so it's good to ferment. If you put the dough in here and ferment it for 40 minutes, it will swell really well. The inside of the microwave is full of moisture and warm like a fermentation machine. And it's better because it's narrow inside.
STEP 9/11
After exactly 40 minutes, I took it out of the microwave and it came up well because it was very well.
STEP 10/11
Bake in a 190 degree convolution oven for 12 minutes (~15 minutes). Try to increase the time depending on the type of oven.
STEP 11/11
As expected, the oven door has more color today. I had to give it back in the middle, but it didn't come out evenly when I left it. I applied a bit of grape seed oil on the top. However, when baking fermented rice bread, it is better not to open the oven door in the middle as much as much as possible.
