Then, after I moved out of the official residence, I bought pickled cabbage and made kimchi, but due to the wind, my dad planted cabbage in the garden for the first time in a while, and it was full of eggs, so I picked cabbage and made kimchi after a long time. He said he would do it by taking advantage of the memory of pickled cabbage in the past, but it was pickled for too long and the cabbage became a little salty. In 2019, we ordered half of the cabbage in the garden and half of the pickled cabbage, and this year's kimchi was completed like that.

Prepare 40kg of pickled cabbage seasoning... 1.2kg of garlic, 500g ginger, 3.2kg of raw shrimp, 2 liters of anchovy sauce, 1kg of shrimp, 2 cups of plums, 1.2kg of trimmed Daebong Hongsi, 2 handfuls of anchovies, 2 large heads, 2 kelp, 2 green onions, 1 cup of 4L glutinous rice, 2.5kg of red pepper powder, 12 small pieces

He asked me what I should do with all the cabbages, and I thought I should make kimchi myself this year, and the owner of the cabbages was very satisfied. When I roughly calculated the size of the cabbage and the abandonment, I thought it would be about 20kg of pickled cabbage, so I ordered an additional box of 20kg of pickled cabbage. Dissolve salt in water to make salt water, soak the cabbage cut in half, and soak it in salt water between the leaves of the cabbage so that the cabbage wilts for 1-2 hours.

Put the salted cabbage one by one, pour the salted water that has been pickled for a while, and marinate it for more than 12 hours. It's good to flip the top and bottom in the middle. I think it's a little salty because I pickled it for 24 hours. It's been pickled for too long. I put it in water to get rid of the saltiness, but it's not the taste of the crispy cabbage that was less salted before.

The washed cabbage was drained as much as possible overnight. The pickled cabbage I ordered has arrived, so I need to prepare the seasoning now.

Pour a 2 liter bottle of anchovy sauce into a bowl, prepare 1kg of salted shrimp, 2 cups of plum syrup, and 6 Daebong ripe persimmons, peel off the top and a layer of thin skin, drain the seeds, and add 1.2kg.

Add 2.5kg of red pepper powder and mix well to make seasoning.
STEP 14/16
This is the radish that we farmed. But I picked a big one and used it to make kimchi. It's smaller than a normal radish sold in the market.
I prepared 12 small radishes peeled and shredded. I only put in radish without any other ingredients.

Mix the prepared radish salad and kimchi seasoning little by little...
I applied 1/4 of pickled cabbage to the stem with all my heart.
STEP 16/16
At the end, wipe the seasoning bowl with the pickled green leaves, apply the seasoning roughly, and use it as a cover in the kimchi container that you leave for a long time. The kimchi container that I eat right now is not covered with green leaf cover. Kimjang Kimchi, which I eat for a year, my year of farming in 2019 has ended like this. Next year, we decided to plant only a few cabbages for ssam, geotjeori, and kimchi soup. It is right to order pickled cabbage for kimchi. It's so hard.
