First, add chili oil, green onions, minced garlic, and minced ginger. Place in a heated pan.

I'm going to stir-fry it. Stir-fry it on high heat, please. You just have to stir-fry the green onions until they're out of breath.

Add the pork and stir-fry it. Use a spatula to stir-fry the meat as if you were cutting it with scissors so that it doesn't clump together. That way, the meat can be spread evenly as it melts.

If the color of the meat is gray, add mala sauce and dooban and stir-fry them together.

Pour water and add chicken stock and a solid piece. Bring to a boil over high heat.

Prepare tofu while boiling. It's thick tofu, so cut it into cubes and prepare it.

When it starts to boil, add tofu. Turn it over carefully. So that the tofu doesn't break it doesn't break. Just pour the soup into the tofu and boil it. Lastly, add starch water little by little in a circle to adjust the concentration.

Mapa tofu with a spicy scent is complete. If you want a bit more red, you can add more red pepper powder.
