Preparing and blanching webfoot octopus
It's chewy and attractive. It's delicious even if you eat it as it is. If you dip it in salty and savory sesame oil salt or sweet and sour red pepper paste I'll be able to enjoy it even more deliciously!

Ingredients
  • Webfoot octopus
    350~400g
  • Flour
    2T
  • a sun-dried salt
    1/2T
  • water parsley
  • Shiitake mushroom
  • Red pepper paste

Cooking Steps
STEP 1/8
After removing the internal organs from the inside of the head, (You don't need to remove the internal organs from the head and blanch them according to your preference). Of course, you can't freeze it!! Only fresh ones.)

And if you squeeze the inside of your leg with both fingers, you'll get teeth. You can take it off with your hands or cut it with scissors

Add flour and salt to the webfoot octopus and pat it hard like washing the laundry. (If you don't have water in it, add water little by little.) *Especially, focus on the legs! There's a lot of red over there, so it's messy

And wash it in running water twice.

Drain the webfoot octopus with a kitchen towel after washing towel
STEP 7/8
Blanch webfoot octopus in boiling water over high heat for 1 minute to 1 minute and 20 seconds. (About the legs go inside, and the suckers are alive. When the color turns red!! The length of the hair without the internal organs is the same as the legs. Also, if you boil it too much, it will be tough~ lol) *However. Longer hair with internal organs!! I think you should boil it for at least 10 minutes? <UNT_PHL> If you wash it in ice water, the texture comes out better That's up to your taste!
STEP 8/8
This blanched webfoot octopus can be enjoyed more deliciously by dipping it in salt or red pepper paste with minari and raw shiitake mushrooms.
