1] First, I'll marinate the chicken legs. Add 1 cup of frying powder, 1/2 cup water, 1/2T of curry powder, 1 egg, mix well, wrap, and place in refrigerator for about 30 minutes.

2] Remove the marinated chicken and lightly coat with a cup of frying powder and a half a cup of bread crumbs. If you use bread crumbs, you can complete the chicken more crispy.

3] Now preheat cooking oil over high heat for 5 minutes.

4] Place chicken legs in heated cooking oil and let stand for 2 minutes, adjust heat to medium-high heat, and stir lightly. If you stir it as soon as you put it in, the batter may fall off easily, so it's good to fry it for about 2 minutes and stir it to remove the stuck part when the skin is hardened to a certain extent. Fry for 8 minutes from now on.
+Tip: Isn't it easy to set the temperature of frying oil? When you drop a bit of salt, it pops up and you're ready. If the salt sinks in the oil, it means it's not preheated yet, so it's better to heat it a little more. Please be careful that fried chicken can become soggy if you fry it in less preheated oil!

5] Then serve the first fried chicken on a kitchen towel, heat the oil for 2 minutes, and bring back the temperature to drop.

6] Add the first fried chicken to the heated oil and fry for another 6-7 minutes. I'm done making crispy chicken by frying it twice!
