Cooking Steps
STEP 1/11
Prepare the dried pollack.
STEP 2/11
Cut off the thick part of the rhubarb.
STEP 3/11
Wash it in clean water about three times. Add 2 to 3 drops of vinegar, soak for 5 minutes, and then blanch.

Add 400ml of water and bring to a boil.Add a spoonful of salt and stir.

When the water boils, blanch it slightly.
Grasp the dried pollack with a picker and blanch it by rotating it.

Blend it in cold water.

Drain in a strainer tray.
