STEP 1/8
Break 4 eggs into a bowl and put them in.
Add a little salt, 1/3 tbsp sugar, 1 tbsp refined rice wine (or mirin), and 1 tbsp water and mix well.
Then strain it through a sieve and remove the ligaments.

Cut 2 slices of cheddar and 2 slices of cheese in half and stack them.

Grease the pan with a little cooking oil over low heat and gently wipe the pan with a kitchen towel.
Pour only half of the egg mixture and when the top is slightly cooked, place cheddar and slice cheese side by side.

Roll the eggs well.
Apply some cooking oil to the empty space again and wipe lightly with a kitchen towel.

Pour all the remaining egg mixture, and use a spatula to lift the rolled egg roll slightly to allow the egg mixture to enter naturally.

Likewise, when the top of the egg is slightly cooked, carefully roll the egg and complete it.
It's more convenient to use two fritter tender at this time :)

After cooling the finished egg roll, cut it into bite-size pieces.
