STEP 1/10
I used beef soup with pork because it was not enough pork. I chopped 50g of pork neck and 50g of beef soup as finely as possible
STEP 2/10
And put it in a pot and prepared the white part of the green onion in the same amount as the meat. Finely chop 100g of chopped green onion and 1/4 onion.
STEP 3/10
And 1/3 cup soy sauce and 1/3 cup rice wine (I put rice wine instead of cooking wine) Add 1/3 cup sugar and 1/3 cup oligosaccharide (I put oligosaccharide instead of starch syrup) and mix well.
STEP 4/10
Boil it evenly and cool it down.
STEP 5/10
I had to grind apples or pears in a blender with water, but I used apple juice at home because I didn't have any pears. I put 6t of garlic and 1t of ginger in a blender, poured 1 pack of apple juice, and ground it finely.
STEP 6/10
Then pour it into the cooled seasoning. Add 1 teaspoon of pepper and mix well.
STEP 7/10
And add a little bit of fine pepper powder and mix it to adjust the concentration. For your information, 10 to 12 tablespoons of fine pepper powder feel watery because I added 10 tablespoons of fine pepper powder, so I wonder if it's a little dry because I added 2 tablespoons
STEP 8/10
Put 150g of noodles in boiling water and when it boils up, pour a cup of cold water to calm it down, and when it boils up again, boil the noodles three times.
STEP 9/10
Then rinse thoroughly in cold water and drain.
STEP 10/10
Put the noodles in a bowl, add 2 tablespoons of sauce, shredded pickled radish, chopped green onion, a little sesame oil, and the most important thing, mix it evenly.
