Prepare cucumbers and chives.

Cut the cucumber into 3cm pieces and cut it into 4 pieces. Sprinkle with salt and coat evenly.

Wash the chives thoroughly and cut them into 5 pieces.

Put glutinous rice into the paste, cool it down, and add red pepper powder.

Add sugar, minced garlic, anchovy sauce, and plum extract and mix.

Drain salted cucumbers on a strainer tray and mix them with leeks.

If you mix the cucumber kimchi well, it's done!
Put it on a plate and sprinkle sesame seeds on top. That's it!
When you eat cucumber kimchi right away, it tastes even better with a few drops of perilla oil or sesame oil.
Adjust the amount of fish sauce and sugar to your liking.
Let the glutinous rice paste cool and use.
