In May, for Family Month, my family tried to take my grandfather and grandmother to Jeju Island, but due to my grandmother's poor health, there was some inconvenience in flying, so I had to cancel my trip. The grandmother's expression was very dark because she felt sorry and sorry for her family. When I was young, I spent my grandmother's 70th birthday party in Jeju Island, and my grandmother ate sea squirt very deliciously at that time, so I also encountered sea squirt for the first time. While thinking about what food to make to soothe the regret of not being able to go to Jeju Island this time, I thought of Jeju Island, and I developed a noodle dish to stimulate my appetite using my favorite noodles for my grandmother who usually has no appetite. The sauce is mainly a mixture of red pepper paste and miso soybean paste, but the regular soybean paste has a strong scent and can interfere with the unique taste and aroma of sea squirt, so we used a lighter miso soybean paste to add flavor to the dish. On top of that, I used water parsley that goes well with sea squirts and added onions and carrots to add crunchy texture to bibimmyeon. In addition, sea squirt is a food ingredient that boasts a rich content of vinadium (promoting insulin secretion in the body) and prismrogen (prevention of memory loss), which show excellent effects in preventing "diabetes" and "dementia." Fortunately, my grandmother does not have diabetes and dementia yet, but prevention is more important than treatment. In Korea, which is about to enter an ultra-aging society, diabetes and dementia are problems right now, and there is no perfect treatment, so the only way to slow the progress or prevent it. Cooking Steps
STEP 1/6
1. Buy sea squirts at a mart or a nearby seafood market.
(The general mart sells trimmed sea squirts, and in the seafood market, you can buy trimmed sea squirts if you ask them to take care of them.)

2. Trim all vegetables for cooking
(1) Separate the leaves from the stems of the water parsley and cut the stems diagonally to about 1cm.
(2) Slice onions thinly.
(3) Slice carrots thinly.
(4) Chop the garlic into small pieces.
(5) Slice peppers thinly at an angle.

3. Make the sauce.
(1) Add 1T of red pepper paste, 1/2T of miso paste, 1/2T of minced garlic, 1/3T of wasabi, 2T of plum syrup, 1/3T of vinegar, and 2T of sea squirt water and mix them.

4. Mix the sea squirt with the sauce made in 3.

5. Prepare the noodles.
(1) Boil noodles in boiling water.
(2) Rinse the boiled noodles in cold water.
(3) Rinse noodles with perilla oil and place on one side of a plate.

6. Put the toppings on top.
(1) Place sea squirt mixed with seasoning made in 3 on the other side of the noodle.
(2) Place water parsley stems on top of noodles.
(3) 6-(1) Place the water parsley leaves on top and then the carrots and onions.
(4) Garnish with red pepper and sprinkle sesame seeds.
- If you put 2T of sea squirt water in the sauce without throwing it away, you can make bibimmyeon full of sea scent. - If there is no miso soybean paste, it can be used as a substitute for regular soybean paste. I used miso doenjang to match my cooking theme to restore my grandmother's smile. Also, due to the nature of the sauce in Bibimmyeon, it has to be a little watery to mix well, but because it becomes red pepper paste, I recommend you to use miso soybean paste, which is thinner than regular soybean paste. -You can cut sea squirt into small pieces according to your preference. - When boiling the noodles, pour a cup of cold water to make the noodles more chewy. - The reason why perilla oil is applied to noodles is to prevent them from spreading quickly and to make them more flavorful.
