STEP 1/11
Buy as many cucumbers as you want and wash them clean first.

Dry clean cucumbers. You can put it in a basket and take it out, but I'm meticulous, so I wiped it with a kitchen towel^^

Put these cleanly prepared cucumbers in a bowl beforehand and check the amount. You have to make salt water until the cucumbers fall asleep so that you can use it without throwing away water^^

We're going to boil salt water in a 10:1 ratio
I needed a total of 4 liters of water, so I boiled it with 400g sea salt.
STEP 5/11
If the water is boiling and the salt is all melted, put it in the cucumber
STEP 6/11
Then press down on a heavy cutting board or cleanly washed stone so that the cucumber can sleep well in salt water.
STEP 7/11
I didn't have a stone. I put a small cutting board on it and it was sticking out...It's not enough, but I pressed it with an earthen pot because it was light.Haha
At this state, for 4 days at room temperature!!
But if the heat rises above 30 degrees Celsius...Please filter it out on the third day. Or you'll get a bump on the water.
STEP 8/11
It's been a day. Water came out of the cucumber, so it's gone even if I don't press it. Haha
Now, pour the cucumber in 4 days and boil it again and pour it into the cucumber when it is hot.
After that, refrigerate (put it in the refrigerator when the water cools down~)
STEP 9/11
Tada!!
This is six days after pouring the second water. It has a lot of cucumber color, right? From the second time you pour water, it's settled well even if you don't press it with a heavy one. And if you make a new salt water like me and boil it, it becomes a clean cucumber ^^
STEP 10/11
Make sure to keep cucumber kimchi in salted water and refrigerate it. The summer weather is so hot these days that it can make it soft through salt
STEP 11/11
When you eat it, cut it like this and soak it in cold water to remove the salt. It's too salty to just eat. ^^
Soak it in cold water for about 10 minutes and change the water in the middle to remove all the seasoning
Make sure to pour water right away when it is hot.
It's a secret to make the cucumber crispy without being softening it^^
