crunchy cucumber kimchi recipe

Cooking Steps
STEP 1/9
Clean the outside with salt, cut the cucumber into 3~4 pieces, and add a + shape cut
STEP 2/9
Dissolve 5 tablespoons of salt in warm water and pickle cucumber
+ Pickle the cucumber cuts for about 30 minutes until they open smoothly. (If you pickle them in warm water, you can shorten the time^^)

I'm going to refer to the altoro recipe that says it's good if you put in radish, and I'm going to cut the radish into small pieces
STEP 4/9
Add 2 tablespoons of red pepper powder to the chopped radish and add the water
STEP 5/9
Finely chop 1 tablespoon of shrimp pine nut, mix it well with 2 tablespoon of water, and strain it through a sieve. It's clean without the ingredients

Add 7 tablespoons of plum juice, 2 tablespoons of minced garlic, 1 tablespoon of minced ginger, 5 tablespoon of red pepper powder, and 1 tablespoon of salt
Grind 1cm chopped chives and 1 onion and add.

Mix the prepared seasoning well and add more salt if it lacks seasoning

Drain the cucumber, which has been pickled well enough to open the sheath gently.
Add the prepared seasoning between the cuts
STEP 9/9
I filled the filling carefully between the cuts and put the remaining seasoning on the cucumber.
