Cooking Steps

Place all ingredients in a baking machine or kneader and knead. The toughness may vary depending on the environment, so you can adjust the water. I turned the baking machine dough course twice.

When the dough is complete, apply the first fermentation. It will be fine if the volume is increased by 2 to 2.5 times. If you poke it with your flour-coated finger and it comes up, it's fermented. It took about 60 minutes from 27 degrees to the dough temperature and room temperature.

When the first fermentation is complete, divide it into two, cover it with wet cotton cloth, and perform medium fermentation at room temperature for about 15 minutes
