Put anchovies on a dry ungreased pan and stir-fry them over low heat, blowing moisture away.

Place roasted anchovies on a sieve and shake off crumbs and other foreign substances.

Put oil on a pan heated over low heat and add 0.5 tablespoons of minced garlic to give it a garlic scent.
Then add the stir-fried anchovies and add 3 tablespoons of refined rice wine to remove the remaining smell.

When the alcohol scent disappears, add 0.5 tablespoons of soy sauce and 0.3 tablespoons of sugar to season it.

Turn off the gas heat and add 3 tablespoons of starch syrup and mix evenly.
