#Wednesday Food Talk #Making Uni Jjajang #Making Old Jjajang #Ea
Uni Black Bean Noodles... Black bean noodles, just old black bean noodles!! What the hell is what. On top of that, stir-fried black bean noodles The kinds of jajangmyeon are also changing in various ways. But for some reason, I miss the old jajangmyeon. Uni jajangmyeon is made by cutting all the ingredients into small pieces, adding fried chunjang, and sweetly adding honey or caramel sauce. I put a lot of onions and zucchini and pork pumpkins It is an old jajangmyeon and uni jajang rice with cucumber salad as garnish. But!!! Rice is not just rice, but Chinese fried rice with green beans and eggs.

Cooking Steps
STEP 1/9
These are the ingredients I prepared. Cabbage, onions, minced pork, stir-fried chunjang, and pork pumpkin and zucchini. I suddenly thought of it, and the people who farmed it said that the zucchini was not sold, so they all disappeared. It was really unfortunate. zucchini is also used well when making jjamppong. And it's a good ingredient to use for various stir-fried dishes. Zucchini doesn't go well with stir-fried food. It's hard and has little water, so it's a good ingredient for stir-frying and grilling. The price is also cheaper than zucchini.
STEP 2/9
Finely chop all the ingredients. That's the basic taste of Uni Black Bean Noodles.
STEP 3/9
Add chili oil and stir-fry sliced green onion, minced garlic, minced ginger. The chili oil I'm into these days is called fire-flavored flavored oil, and if I knew it at this time, I would have put it in, but unfortunately, I just added chili oil.
STEP 4/9
First, stir-fry the pork first. Stir-fry well until grayish. Add refined rice wine, liquor, or soju in the middle to remove the smell.
STEP 5/9
If the pork is done, add the rest of the ingredients and stir-fry them.
STEP 6/9
And add the stir-fried chunjang, which is both liver and jajang sauce. I buy the black bean paste that is sold at the mart, pour about a cup of oil, stir-fry it, and measure it. If it is over high heat, the chunjang must burn, so put oil in a pan that is heated enough, and stir-fry the chunjang over medium heat. And if you strain it through a sieve and store it, you can leave it and use it as a jajang sauce.
STEP 7/9
There is oil and moisture from various ingredients, but yes, you need water to eat more with rice. You can just add bottled water. I put in chicken oil.
STEP 8/9
I think it's finally time to adjust the concentration. All the ingredients are finely chopped, so it cooks quickly. I think it's been less than 10 minutes. I just stopped taking pictures in between, and time went overboard. After making starch water, make a circle and sprinkle it from the outside. And you keep stirring to adjust the concentration. When it's thick, turn off the heat and put sesame oil around it!!!
STEP 9/9
For the rice, you cut the green beans into small pieces, add the eggs with the rice, mix them, and fry them in a heated pan with oil. Like the jjajang sauce that comes with fried rice, of course!!! Put fried rice, uni jajangmyeon, and cucumber salad on top. Uni Black Bean Noodles are done.
