Mediterranean Brown Rice Salad (Greek Salad)
It's good to use cold rice. It's low in salt, healthy and refreshing, so it's good for breakfast

Cooking Steps
STEP 1/14
Cut 1/3 cucumber into small pieces
STEP 2/14
Please make a tomato into small pieces, too. It's okay if the seeds go in

Cut half of the bell pepper into small pieces
STEP 4/14
Cut 1/3 zucchini into pieces, too
STEP 5/14
Please prepare a bowl of Lucola
If you have any other salad leafy vegetables, prepare a bowl of any of the following: lucola basil, mint, soft spinach, mustard leaves or lettuce You can mix them together
I put in lucola, basil, and mustard leaves. The Lucola scent is the best. The picture is basil

Pour 3T olive oil into a pan and stir-fry 1.5T minced garlic
STEP 7/14
Add bell pepper, zucchini and 2 pinch of salt and pepper and stir-fry Stir-fry until the zucchini is crispy
*To skip the stir-fry process, you can replace zucchini + bell pepper with raw bell pepper and minced green onion. Instead, add 3T olive oil, 1T lemon juice, 1T minced garlic, 1T salt, and pepper

Stir-fry it all and put it in a bowl

Add 1T of lemon juice to the remaining olive oil and pour it all in
*Balsamic vinegar, apple vinegar, and wine vinegar are all possible instead of lemon juice

Cool down the brown rice and add 1 bowl
Regular rice is okay, too
You can use the food you made the day before

Mix it with zucchini and bell pepper

Cut the leafy vegetables and add all the tomatoes and cucumbers

Add oregano powder and mix together
*It's not essential, but if you add 1T of sugar, it becomes more savory. You can skip oregano and sugar

On top of that, spread about 50g of feta cheese (two handfuls) and put crushed nuts on top, and it's done!
*Instead of feta cheese, goat cheese and mozzarella cheese are also available. (Mozzarella cheese is light, so please add more salt.)
*All almond pine nuts and peanuts are available for nuts. It's more savory if you stir-fry it. I used almond
