Cut 1/3 cucumber into small pieces

Please prepare a bowl of Lucola
If you have any other salad leafy vegetables, prepare a bowl of any of the following: lucola basil, mint, soft spinach, mustard leaves or lettuce You can mix them together

Pour 3T olive oil into a pan and stir-fry 1.5T minced garlic

Add bell pepper, zucchini and 2 pinch of salt and pepper and stir-fry Stir-fry until the zucchini is crispy
*To skip the stir-fry process, you can replace zucchini + bell pepper with raw bell pepper and minced green onion. Instead, add 3T olive oil, 1T lemon juice, 1T minced garlic, 1T salt, and pepper

Stir-fry it all and put it in a bowl

Add 1T of lemon juice to the remaining olive oil and pour it all in
*Balsamic vinegar, apple vinegar, and wine vinegar are all possible instead of lemon juice

Cool down the brown rice and add 1 bowl
Regular rice is okay, too
You can use the food you made the day before

Mix it with zucchini and bell pepper

Cut the leafy vegetables and add all the tomatoes and cucumbers

Boiled beans are good. You can cut black olives or green olives
