How to make cockle bibimbap in a cart bar at Umji's restaurant i
I had a day trip to Gangneung in April 2017, and I got a lot of help from my younger brother who is from Gangneung. I enjoyed Anmok Beach, Cafe Street, Gyeongpo Beach, Heo Gyun and Henan Seolheon Memorial Park, and Gyeongpo Lake for a day. It turned out to be a famous restaurant that everyone knew except me, but the menu that boasts the highest sales at Umji's cart bar was cockle bibimbap. I like cockle, so my mother often made it for me as a side dish, but the visuals of cockle bibimbap at the restaurant table were different. And the restaurant that took me to was Umji's cart bar, saying, "This is delicious, where people wait in line to eat." Everyone who knows said they know, but I didn't know Umji's cart bar was a famous restaurant because I did a rough survey. It was a visual cockle bibimbap that showed why it was a famous restaurant at a glance. During my trip to Gangneung, I made and ate the most delicious cockle Bibimbap at home for the cockle season. While eating it at that time, I felt like I could make it at home, so I thought for a while, "Someday I make it too," but I finally made it and ate it today, more than a year later. I tried to make it as similar as Umji's Kkomak Bibimbap, and since I made it, I think you can make it more delicious and pretty.

Cooking Steps

Since the residue from boiling cockles is sunk below, it does not throw away only the clean upper water, but also the bottom water.

And completely remove the residue left by washing the cockle in boiling water.

Drain well-maintained cockles.

Chop carrots thickly, cut cucumber peppers at 0.5cm intervals, and chives at 3cm intervals.

Then, put cockles, seasonings, carrots, cucumber peppers, and chives in a bowl and mix them evenly, and put them nicely in one bowl of your choice.

Then mix the remaining seasoning and rice.

If you put rice next to the seasoned cockle on one side of the bowl, cockle bibimbap is complete.
Cockles are boiled well, so they have a chewy and chewy texture, and they have a crunchy texture with cucumber peppers and carrots. If you like spicy food, you can add Cheongyang red pepper instead of cucumber red pepper, but it would be better to cut it thickly when adding cucumber red pepper and thinly when adding Cheongyang red pepper.
