STEP 1/3
- Prepare eggs, soy milk, and butter in a hot state.
- Prepare the dark cover by melting it in a medium bath.
- Measure flour, baking powder, and cocoa powder together in a bowl.
- Blanch walnuts slightly in boiling water and bake them in an oven preheated to 160 degrees for about 5 minutes or bake them lightly in a frying pan.
STEP 2/3
- Add eggs and sugar and whisk. a
(Work until it's slightly foamy without whipping it to the point where it's ivory like the air forest method.)
- Add the melted cover chute to the a and mix gently with a spatula.
- Add soy milk at room temperature and mix
(Cold soy milk may harden the dough)
- Sift the powder and mix it with a rubber spatula.
- Finish the dough by adding walnuts when mixing until the powder is slightly visible. (Don't put it all in, but leave a little and put it on top of the dough!)
- Put the dough in a piping bag and put about 80% in a muffin mold.
Topping the walnuts left on top.
