STEP 1/6
Mix strong flour (300g), egg yolk (1), water (80g), and salt (3g) and ripen for 20 minutes to make dim sum.
STEP 2/6
Add the American wood battery (300g), shrimp (200g), and shiitake mushrooms (100g) and mix.
* Make sure to wash the ingredients of shrimp and dim sum! Please remove it.
* It's better to add green onion oil or garlic oil.
* If you don't have shiitake mushrooms, you can replace them with bamboo shoots.
STEP 3/6
Mix well-mixed dim sum with salt (2g), sugar (3g), pepper (2g), sesame oil (40g), potato starch (100g), and chicken powder (20g) and season.
* If you don't have chicken powder, you can replace it with oyster sauce.
* Mix the starch at the end.
