STEP 1/21
First, prepare citron. I ordered 3kg
STEP 2/21
As you can see in the picture, the size comes in one hand. It was 3kg and 25 pieces.
STEP 3/21
First, soak the citron in water and sprinkle enough baking soda to soak it for 20 minutes.
STEP 4/21
After 20 minutes, wash it first by turning it upside down with both hands, and wash it again with thick salt.
STEP 5/21
And dry it completely!!
STEP 6/21
When the water is completely removed, use a fruit knife to remove the top. and remove the scratches that you see here and there
STEP 7/21
Cut the yuja in half horizontally.
STEP 8/21
Use a fork to remove all the citron seeds.
STEP 9/21
Yuja is a lot more..There's a lot in it.. If you don't want to come out when you make cheong and eat later..Be patient and take it out hard..^^
STEP 10/21
After removing the citron seeds, separate the pulp from the skin first
STEP 11/21
Put the skin aside.
STEP 12/21
And then you start chopping the shells one by one. You can cut it in half and then cut it sideways, but if possible, cut it as thin as possible!!
STEP 13/21
It takes a lot of time to shred it, so it'll be less difficult if you sit down and shred it while watching TV^^
STEP 14/21
After cutting the shredded flesh, put the separated flesh into a blender and grind it gently to make juice. And pour it on top of the shredded citron
STEP 15/21
Add sugar, please.
STEP 16/21
Put in the sugar first and mix it
STEP 17/21
I'm going to add honey. You can make it with 100% sugar, but I also used honey to make the citron syrup melt faster.
STEP 18/21
Mix well, put the lid on the kimchi container and serve on the veranda for half a day to absorb sugar and honey for a while.
STEP 19/21
Disinfect the container for citron syrup in hot water and dry it completely
STEP 20/21
After half a day, mix it with citron syrup. As you can see in the picture, the citron will be well lumped together.
STEP 21/21
Then, put the citron in the container one by one. It's finished!!
When drinking citron syrup, 2 spoons of boiling water (180ml) is enough.
You can eat yuja-chae with it,
The texture is better when you chop it thinly.
