Chop the chives and onions.

Add a little bit of thick salt and wash the octopus, then put it on a sieve and drain it. (You can use it by blanching it in boiling water at this time. I use it without blanching)

Cut the octopus into appropriate sizes.

Add the above amount of seasoning (the sesame oil later) and make the sauce.

Heat the wok with cooking oil and onions.Add chives and stir-fry slightly (about 1 to 2 minutes)

Add the octopus, stir-fry half of the sauce, and add as much as you like while tasting.

Stir-fry quickly over high heat.Add sesame oil

Put it in a bowl.
Since the octopus is not blanched, stir-fry it quickly on high heat and eat it right away to avoid generating a lot of water.If you are worried, blanch the octopus in boiling water and stir-fry it.
If the seasoning is left, you can keep it in the refrigerator and use it for stir-fried squid.
