STEP 1/4
1. It's the 2nd round of the bachelor dance...I bought it at a traditional market... It is convenient to clean the radish if it is not too dirty.
Let's put the radish in the sink... Scrub the dirty part of the radish with a knife and remove the part where the radish leaves meet with the knife...After that, wash it once... Cut the radish into quarters with a knife.
Remove the yellow leaves from the leaves.

2. Spread a handful of the trimmed radish in a wide bowl and sprinkle it with bay salt... Spread a handful of radish on top of it and sprinkle it with bay salt...Repeat about four times like this...Lastly, spray 2 cups of water.
(A total of 4/5 cups of sea salt were sprayed during the pickling process... )
The total pickling time is 2 hours... (depending on the amount of radish...)...Adjust the amount of time you need to marinate~)
Stir it in the middle of the pickling (after 1 hour) so that it can be evenly pickled

3. Boiling glutinous rice paste: Put 1 cup and a half of cold water in a pot, add 4T of glutinous rice powder, and stir it with a whisk...
Turn the gas stove on medium heat and stir with a spatula to make glutinous rice paste..(boil for 3 to 5 minutes)
4. Let the boiled glutinous rice paste cool...While the glutinous rice paste cools...Prepare ingredients to grind in a blender like glutinous rice paste.
1/4 onions. 1/4 pears. 1 white green onion. Five red peppers. 10 garlics. Cut 2 ginger (the size of garlic) into pieces, put cooled glutinous rice paste and 1/2 cup fish sauce in a blender and grind them together.
Mix 1 cup + 2/3 cups of red pepper powder in the ground sauce in a blender...Add 2T of sugar + 4T of sea salt to this and mix them evenly. (If you try the seasoning, it will be easy...Later, water comes out of the radish, so it tastes just right.)
5. Wash 1/2 step of chives (about 2 handfuls when held by hand) and cut them in half..(I'm going to mix it with Chonggak kimchi, so you can cut the chives into big pieces.)
STEP 4/4
5. It's a pickled radish for 2 hours.. Wash it with water about three times and drain it on a basket.
(You just need to drain it in a basket for 20 to 30 minutes.)
6. Put the drained radish in a bowl...Add the prepared chives and sauce and mix them well~
Store at room temperature for more than a day and store in the kimchi refrigerator if it smells ripe~~
==> When you mix it, taste the pepper powder. You may add a little more salt
==> It's good to mix it with water as the radish ripens later.
