Cooking Steps

Remove the chicken skin while washing under running water and remove the intestines and grease between the chicken bones.

Blanch the chicken in boiling water with vinegar. You can remove the smell of chicken by blanching it with vinegar. The blanched chicken is washed clean in running water to remove the secondary chicken smell. You have to wipe it well so that it doesn't smell like chicken. In the Jongwon Baek recipe, the chicken is boiled to remove the foam and cooked in this water, but I put it back in and boiled again.

Cut the potatoes and cut the big ones in half. Cut the onion into 2 pieces and cut it into 3 pieces.

Season the cleanly washed chicken and mix it evenly. You can add the sauce right away and mix it, or you can add the sauce and mix it separately. If you add ginger powder and rice wine to the seasoning, you can catch the smell of chicken again.
