Yuchae (Haruna) Vegetable Soybean Paste Seasoning
I'm from Gangwon-do, and I've never eaten rapeseed when I was young. I got married and lived in the Seoul metropolitan area, and I met a rapeseed that is sold as a food ingredient at a mart. Since it's a vegetable that I haven't tried, I wondered what I should make. It looks similar to radish leaves, so you can make it like radish leaves.

Cooking Steps
STEP 1/9
Cut off the thick stems of the rapeseed
Cut only light stems and leaves into bite-size pieces.
STEP 2/9
Blanch a spoonful of salt in boiling water for 3 to 5 minutes.
STEP 3/9
Quickly soak it in cold water and rinse it two or three times.
STEP 4/9
Squeeze out the water and dissolve the clumped vegetables.
STEP 5/9
Add 2 tablespoons of perilla powder, 1 tablespoon of anchovy powder, 1 tablespoon of minced garlic, 1 tablespoon of soybean paste, 2 tablespoon of perilla oil, 2 tablespoon of minced green onion, and 1 tablespoon of oligosaccharide.

Mix well so that the sauce can soak.
STEP 7/9
It's good if you just eat it with the sauce.
STEP 8/9
Stir-fry vegetables over high heat, add 1/4 cup of water, cover, and cook over low heat for about 5 minutes until the soup is almost gone, making it a soft rape soy bean sprouts.
STEP 9/9
If you stir-fry it with a little water in the pan, it's more delicious because the stem is soaked in the seasoning.
