Not too long ago, I compared the dried anchovy powder and the roasted anchovy powder without stir-fried anchovy powder.
The roasted anchovy powder has a slightly brown color, and when you smell it, the uncooked anchovy powder smells like the sea and smells a little fishy.
On the other hand, roasted anchovy powder hardly smells fishy and smells savory. I put it in my mouth and tasted it with my tongue, and the stir-fried anchovy powder was much better.
The stir-fry process is a little cumbersome, but if you stir-fry anchovies and powder them, the taste of the food will be much better.
