Cooking Steps
STEP 1/10
Prepare chestnuts by peeling off the hard skin. Please take off the yulpi carefully so that it doesn't get damaged.
STEP 2/10
Add 2.5 tablespoons of baking soda to the peeled chestnuts and soak for at least 12 to 24 hours.
STEP 3/10
The chestnuts soaked in baking soda come out this dark red after a day. Put it on the heat and boil it for 30 minutes. (1st boil)
STEP 4/10
First, remove the water from the boiled chestnut for 30 minutes, wash it in cold water, and return to the pot.
STEP 5/10
Pour enough water to cover the chestnut and boil again for 30 minutes (second time)
STEP 6/10
Rinse the chestnuts in cold water and boil them again for 30 minutes. (3rd boil) The color of the water will become clearer
STEP 7/10
Carefully remove the thick wick using a toothpick for chestnuts boiled until the third time. Be careful not to get Yulpi's. The chestnuts boiled up to the third round would have made the Yulpi smooth and soft.
STEP 8/10
Add sugar prepared at night and add water to cover night and simmer over low heat. Now boil until the soup is halved.
STEP 9/10
Before finishing, add soy sauce and rum and boil it down for another 10 minutes.
STEP 10/10
Put the finished braised chestnuts in a hot sterilized glass bottle with soup. You can put it in the refrigerator and eat it.
