Cooking Steps
STEP 1/22
Prepare the ingredients.

Wash 1/2 cup glutinous rice clean and soak in lukewarm water for 10 minutes.
STEP 3/22
Clean the outside and inside of the chicken well.
STEP 4/22
Wash the internal organs and impurities under running water.

Remove the tip/tail/wood oil with scissors.
STEP 6/22
Put your neck into your body so that the glutinous rice doesn't come out later.

Make a 1cm cut inside the chicken leg

Fill the chicken with stuffing
1 ginseng - 1 chestnut - 1 jujube - 2 whole garlic - 2T swollen glutinous rice

Fill it up and put one side of your leg in the place where you cut it.
Insert the other leg inwards, too.

Put 2L of water in a pot and add the chicken when the water "must" boil.

Cover and simmer for 30 minutes on medium heat and 30 minutes on low heat.

Making perilla seed sauce

1 cup raw bean powder, 2+1/2 cups peeled perilla powder, 2/3 cups glutinous rice powder
Put 2T of salt and 3 cups of water and fold.

Make sure to fold it all together.If you put it in the pot
It doesn't dissolve well and the concentration becomes thin.

Prepare chopped green onions, put them on top.

Put 3 cups of chicken broth in an earthen pot and boil the broth over high heat

When the broth boils, add 1 cup of perilla seed sauce and boil over medium heat for 5 minutes.

Make sure to add perilla seed sauce after the chicken broth boils!
Otherwise, the taste becomes dry and lumpy
STEP 20/22
Put the boiled chicken in an earthen pot and boil it for another 30 seconds.
STEP 21/22
If you boil two in a pot, not in an earthen pot,
Add 6 cups of chicken broth and 2 cups of perilla seed sauce.

The leftover perilla seed sauce can also be used as perilla seed kalguksu!
