Chinese stir-fried eggplants are all fried. Add 1/2 cup of starch water to the finish and make it slightly thick. Starch water also causes the ingredients to get tangled up with each other, but it also makes the seasoning stick to each ingredient. Then turn off the heat and put a couple of rounds of sesame oil.
