Cooking Steps
STEP 1/18
Prepare eggplants by cutting them into twirls. You can cut the eggplant as you turn it around like a pencil.
STEP 2/18
Chop shiitake mushrooms into big pieces. Lay the knife at an angle and cut it like a cloth.
STEP 3/18
We also prepare bok choy by cutting it diagonally. The first thing about Chinese food is to cut all the ingredients and prepare them. If you cut all the ingredients, it's easy to stir-.
STEP 4/18
If you soak the wood ear mushrooms in water for about 10 minutes, they will swell quickly. Cut the green and red bell peppers into similar sizes and cut the onions thinly.
STEP 5/18
Rinse the soaked wood ear mushrooms in running water and drain them. If it's a bamboo shoot can, you can cut it into pieces, and you can also buy it in a compressed state at the mart because it's called bamboo shoot. I used pickled bamboo shoots that I bought during my trip to Vietnam.
STEP 6/18
Now it's time to fry the eggplants. I'm going to fry it with an air fryer, but I'll make a batter first. Add an egg to the frying powder, salt, water, and olive oil, and beat to make a slightly thick batter like whipped cream.
STEP 7/18
Coat the chopped eggplant with starch powder evenly. It's a process to make sure that it's coated well.
STEP 8/18
Then, coat it with batter.
STEP 9/18
As expected, the batter seems to be turning around. Preheat the air fryer to 180 degrees for 5 to 7 minutes, then fry the eggplant covered with batter. Turn it for 7 minutes, take it out, turn it over, shake it over, and fry it four times for 7 minutes.
STEP 10/18
Since we fried eggplants, let's start using the fire now. In a heated pan, stir-fry red pepper oil, rat poop red pepper, sliced garlic, chopped ginger, and green onion. To add spicy flavor with green onion oil.
STEP 11/18
To give it a taste of fire and sweetness, add sugar first and stir-fry it while melting it. Then naturally, the sugar will burn and smell like fire.
STEP 12/18
Another way to make it smell bad is to sprinkle soy sauce slightly on the edge of the pan after sugar. If you stir-fry it, the scent of fire will be added to the strong soy sauce. If you don't have Chinese soy sauce, you can just use brewed soy sauce.
STEP 13/18
Now add the prepared vegetables and mushrooms and stir-fry them. Stir-fry quickly over high heat, please.
STEP 14/18
If the oil and soy sauce are coded and stir-fried to some extent, add frozen seafood. It would be better to take out frozen seafood in advance and defrost it in cold water. Then, add pepper and rice wine and stir-fry them together.
STEP 15/18
I haven't seasoned it yet. It has a brownish color and is fried evenly with a basic soy sauce color. There's also a spicy scent.
STEP 16/18
Lastly, add the fried eggplant and stir-fry it quickly over high heat. You can season it with oyster sauce. Eggplants have already been fried, so you don't have to stir-fry a lot, so just stir-fry them over high heat so that the seasoning can soak into each other.
STEP 17/18
Chinese stir-fried eggplants are all fried. Add 1/2 cup of starch water to the finish and make it slightly thick. Starch water also causes the ingredients to get tangled up with each other, but it also makes the seasoning stick to each ingredient. Then turn off the heat and put a couple of rounds of sesame oil. Then it's done.
STEP 18/18
Put a lot on the plate and sprinkle sesame seeds to finish it off, and you're done with Chinese-style stir-fried eggplants. It's a spicy and salty fried eggplant fried in an air fryer.
