[Making the sauce]
Add 3.5 tablespoons of red pepper powder, 4 tablespoons of dark soy sauce, 3.5 tablespoons of vinegar, 2.5 tablespoons of sugar, 1/2 tablespoons of soft mustard, 1 tablespoons of omija or plum syrup, 1/2 tablespoons of minced garlic, and sesame salt and mix well to make a sauce for tray noodles.

[Boiling buckwheat noodles]
Boil buckwheat noodles in boiling water for about 4 minutes.
If you add half a cup of cold water a couple of times in the middle, you can make more chewy and chewy noodles.
Rinse well-boiled noodles in cold water, soak them in ice water for a while, and strain them through a sieve.
